These bell shaped beauty peppers come from the Caribbean, its name is due to the rich dark hue of its skin and not of its taste.

This is for serious smoky heat lovers.
The fermented paste is made of habanero, salt and garlic.
No vinegar, no onion, no oil.
You can add that later while cooking.
It pairs very well with salsas with fruits, chutneys, marinades and of course meats, pork and beef recommended.

Ají Dulce is the base of this fermented paste.
Its a deeply herbal and fruity sweet pepper without the fire of the habanero peppers.
